Use MERMAID_URL environment variable for alternative mermaid servers

https://mermaid.ink is not fully reliable (See: https://github.com/jihchi/mermaid.ink/issues/491#issuecomment-2708241385)

It's necessary to help to use alternative servers (including localhost following instructions of https://github.com/jihchi/mermaid.ink).
